Red wine warehouse

The pinot noir is made into the Menetou-Salon red wines here. The grape harvest is sorted manually, then destemmed. The grapes are then carried by conveyor belt to the vats. Everything is designed to respect the integrity of the harvest until the grapes begin to macerate.

The macerations (partly cold) in wooden frustoconical vats enable us to develop the silkiness of tannins and achieve a greater complexity of the pinot noir during wine-making.
