The cellars

In this characterful working area, the cuvée Les Renardières is grown in 228, 400 and 500 litres barrels (also called tuns) of different age. For several years, our companionship with the Gauthier Brothers cooperage settled in Menetou-Salon has enabled us to work in symbiosis, using oak wood from the region.
Our rich and gustatory meetings with Fabien Gauthier, chief craftsman of the cooperage, add an unequalled accuracy to his work. Parameters such as the texture of oak, the stoking of barrels or the work on containers are studied and compared to allow the best correspondence between the wood and the living material.
The fruit, freshness and terroir should express equally with the barrel, not in unbalanced way.
